Apple-trees on Dwarfing rootstocks will grow to around 2.5m when mature and you can expect fruit to start within 1-2 years. Either espalier them (more info here), or prune them into an open-vase shape. Dwarfing apples are ideal in that you dont need a ladder to pick fruit or prune, but will need a firm stake to support them in a windy spot.
